Recipe #1: Blueberry Chocolate Chunk Banana Bread

Banana bread is a staple at brunch, and adding the blueberries and chocolate gives it a fun twist that isn’t too different from the original recipe. This bread is fresh and moist, so I can guarantee you’ll be making this bread not just for brunch anymore!
Ingredients:
- 120 grams / 4 1/4 ounces (~1 1/2 cups) almond meal
- 100 grams (2 whole) eggs + 90 grams (3) egg whites, lightly whisked
- 2 fluid ounces / 1/4 cup canola oil

- 170 grams / 6 ounces (~3/4 cup, tightly packed) light brown sugar
- 200 grams / 7 ounces (~1 cup or 2 medium) mashed ripe bananas
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup blueberries, rinsed and dried
- 1/2 cup dark chocolate chunks
Instructions:
Pre-heat oven to 350 degrees. Grease a 5×10 loaf pan with butter or non-stick cooking spray; set aside
In a large bowl, whisk together all ingredients except for blueberries and chocolate chunks; whisk just until combined
Gently fold in blueberries and chocolate chunks
Pour batter into prepared baking pan; bake for 45-55 minutes or until top is no longer wet and a knife comes out clean from center
Allow to cool before removing from pan and slicing
Recipe #2: Egg Muffins with ham, kale, and cauliflower rice

These delicious muffins are not only healthy, but have only 5 ingredients so they are quick and easy to make! They are perfect for a brunch too, not only because of how easy they are to make, but also because they are simple so everyone should like them.
Ingredients:
- 1 Cup Cauliflower cut into bite-sized pieces

- 3 Large eggs
- 1 Cup Kale lightly packed and torn into bite sized pieces
- 3/4 Cup Zaycon Foods Old Fashioned ham heavily packed and cut into bite-sized cubes
- Salt
- Pepper
Instructions:

Preheat your oven to 400 degrees and generously spray a muffin tin with cooking spray. Set aside.

In a small food processor process the cauliflower until broken down and it resembles rice. Set aside.

In a large bowl, whisk the eggs. Add in the kale, ham, cauliflower rice and season with a pinch of salt and pepper. Mix well.

Divide the mixture between 6 muffin tins and then bake until the eggs feel set, about 20 minutes.

Let cool in the pan and then DEVOUR.
Recipe #3: Banana Whey Protein Pancakes

Let’s be real, if you don’t have pancakes at your brunch then is it really brunch? These pancakes are super delicious and have more health benefits than just normal pancakes! If you find they aren’t sweet enough for your liking, add in extra vanilla until they are just right!
Ingredients:
- 4 eggs
- 2 ripe bananas peeled

- 1/2 cup Bob’s Red Mill Whey Protein Powder
- 1/2 cup Bob’s Red Mill Organic Creamy Buckwheat Hot Cereal
- 1/2 teaspoon cinnamon
- 1/4 teaspoon baking powder
- fresh berries and pure maple syrup to serve – optional

Place all ingredients in a high-speed blender and puree until batter is smooth.

Pre-heat griddle or non-stick pan over medium heat and spray with cooking spray.

Pour batter on to pan, 1/4 cup at a time, and heat until bubbles begin to form – about 1-2 minutes. Flip and brown the other side, cooking for another minute or two.

Continue with remaining batter.
